It is a blended champagne composed of about 55% Chardonnay from the Grands Crus (Avize, Chouilly, Cramant, Le Mesnil-sur-Oger) and 45% Pinot Noir from the Grands Crus (Ambonnay, Bouzy, Louvois, Mailly, Tours-sur-Marne and Verzenay).
Elaborated from these Grands Crus, only the best grapes by sorting from the best plots are selected and come from the best vintage years.
The Grand Siècle cuvée benefits from a long ageing process in a cellar sheltered from light and at constant temperature for 7 to 7 years, sometimes more.
The robe is a brilliant straw yellow.
On the nose: a complex explosion of lightly candied citrus fruits followed by aromas of pastries, grilled almonds with fine touches of acacia honey and gingerbread with a subtle and light finish of white flower notes.
On the palate: freshness, intensity and minerality, the three great qualities of an exceptional champagne. The finish is greedy with a wide range of black or white truffles, candied pear and grilled almonds.
Ideal serving temperature: 10 to 12°C.
Food/wine pairing: dazzling with a "land and sea" association such as poultry with crayfish or scallops with black truffles from Périgord or white truffles from Alba.
